Line an oven tray with baking paper.
Preheat the oven to 180ºC fan bake.
Pickled Vegetables: In a medium bowl, combine the julienned carrot and cucumber with the remaining ingredients. Give it a good mix then set aside to pickle.
Char Siu Chicken: In a bowl or high-sided dish, combine the chicken the remaining ingredients. Transfer to the prepared oven tray and bake for 20–25 minutes or until golden and cooked through. Slice into 1cm-wide strips.
To assemble: Fill the baguettes with mayonnaise, sliced chicken and Coleslaw mix. Top with coriander, spring onion and green chilli or hot sauce, if desired.
