Slice the beef thinly against the grain. In a bowl, combine 2 tbsp Hot Chilli Soy Sauce, sesame oil and crushed garlic. Add the beef, toss well to coat, and set aside to marinate while you prepare the vegetables and noodles.
-
Cook the noodles according to packet instructions. Drain and rinse under cold water, then set aside.
-
Heat 1 tbsp vegetable oil in a large grill pan or frying pan over high heat. Add the capsicum and broccolini and cook for 5–7 minutes, turning occasionally, until softened and charred in spots. Transfer to a plate.
-
In the same pan, heat the remaining 1 tbsp vegetable oil. Add the marinated beef and sear for 2–3 minutes, stirring, until browned and just cooked through. Remove from the heat.
-
In a small bowl, whisk together 1 Hot Chilli Soy Sauce, soy sauce, rice vinegar, honey and lime juice.
-
In a large mixing bowl, toss the noodles with the grilled vegetables and dressing. Divide between serving bowls, then top with the seared beef. Garnish with spring onion and coriander.
