What You Will Need

Ingredients

  • Salad:
  • 2 Carrots, julienned
  • ¼ Red cabbage, shredded
  • ¼ Green cabbage, shredded
  • 2 Yellow capsicums, thinly sliced
  • 2 Spring onions, sliced
  • 4 tbsp Mint leaves, roughly chopped
  • 4 tbsp Coriander leaves & stems, roughly chopped
  • Garnish:
  • 6 tbsp Macadamia nuts, toasted and roughly chopped

Dressing

  • 4 tbsp Lee Kum Kee Gluten Free Soy Sauce
  • 1 tbsp Lee Kum Kee Pure Sesame Oil
  • 80ml Olive oil
  • 4 tbsp Macadamia nut butter (or any nut butter)
  • 3 tsp Ginger, peeled & grated
  • 3 tbsp Lime juice
  • 2 Garlic cloves, crushed
  • 1 ½ tbsp Honey

How to make it

  1.  Toss salad ingredients together in a large bowl. 
  2. Whisk dressing ingredients together in a bowl until well combined. Taste and adjust to your liking. 
  3. Pour dressing over slaw and toss through then sprinkle with garnish.
