What You Will Need

Ingredients

  • 1 pack Lee Kum Kee Ready Sauce for Coconut Curry Vegetables
  • 2 tsp Lee Kum Kee Minced Garlic / freshly minced garlic
  • 2 tsp Lee Kum Kee Minced Ginger / freshly minced ginger
  • 1 Green chilli, chopped in rings
  • 1 tbsp Coconut oil
  • 10 Giant prawns (Chicken can be used if you do not have prawns)
  • 1 cup Coconut milk
  • 100 g Snow peas or any beans that are available at home
  • 2 Bok choy (or any greens that are available at home), chopped in quarters
  • 1 Green capsicum, rounds
  • To serve:
  • 1 bunch Coriander
  • 1 Lemon
  • 1 pouch Microwave basmati rice, heated

How to make it

  2. In a heavy based saucepan over a medium heat, fry off ginger, chilli and garlic in the coconut oil. 
  3. Add the coconut milk followed by the ready sauce and bring to a gentle simmer.
  4. Add the snow peas, Bok choy, green capsicum and prawns and cook for a further 5-7 minutes until prawns are cooked through and veggies are just cooked. 
  5. Top with coriander and lemon and serve with steamed rice.
