How to make it

  1. Cook the noodles according to packet instructions. Drain and set aside.
  2. Whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, sriracha or chilli garlic sauce, if using, water and cornflour.
  3. Heat the oil in a large frying pan or wok over medium-high heat. Add the beef mince and cook for 5–6 minutes, breaking it up with a wooden spoon, until browned and cooked through.
  4. Add the onion, crushed garlic and ginger. Stir fry for 2 minutes, until fragrant. Add the carrot, cabbage and capsicum. Stir fry for 4–5 minutes, until the vegetables have softened but still have a little bite.
  5. Add the edamame, cooked noodles and sauce. Toss everything together for 2–3 minutes, until the sauce thickens and coats the noodles.
  6. Stir through most of the spring onions. Serve topped with the remaining spring onions and sesame seeds.
